Vanessa Minnillo accompanied boyfriend Nick Lachey @ the Grand Opening Weekend of The Cove Atlantis on Paradis Island in the Bahamas. All the Hollywood celebs flew to the Bahamian resort for a weekend of fun in the sun. Cindy Crawford and hubbie Randy Gerber, Liv Tyler and her little sis Chelsea, and their dad Steven Tyler, were among the guests. Lindsay Lohan and boytoy, Callum Best, also attended the celebrations at this holiday weekend.

Nick Lachey and Vanessa Minnillo had a run-in on Friday night with a guy who didn’t show much Southern hospitality while at a pre-Kentucky derby party.

According to Nick (via his reps), the couple were making their way through the party at Club Felt, led by Nick’s bodyguard, when some guy yanked Nick’s arm causing his girlfriend Vanessa to fall down. While his girlfriend was trying to calm down her ticked off boyfriend, nearby police cuffed the guy and asked the couple if they wanted to press charges.

Nick Lachey, 33, got slapped with a “fix it” ticket on the spot while driving in the San Fernando Valley with his girlfriend Vanessa Minnillo, 26, following in her own car close behind. “Hey, settle down guy,” said the stone-faced cop, “this isn’t for speeding, it’s for your [dark] window tint.” Lachey acknowleged that his tint was “limo,” but that he needed it because of his “celebrity” status. The cop wasn’t buying what Nick was schlepping, and must not have needed a signed Nick Lachey CD or Newlyweds DVD.

Former MTV veejay Vanessa Minnillo is becoming bicoastal and moving into Nick Lachey’s house in Beverly Hills, PageSix.com reports. Sources say she’s trying to become an actress and focus on gigs in Los Angeles. However, this could pose problems with her job as New York correspondent for Entertainment Tonight. Her rep didn’t return calls.
